Moroccan carrot slaw

Ingredients
2.5 cup, grated Carrots, raw 3.5 tbsp Extra Virgin Olive Oil 1 serving Lemon, fresh squeezed, juice of one whole lemon .25 cup Orange Juice 1.5 tbsp Coriander seed 2 clove Garlic 50 grams Cilantro, raw 1 tbsp Maple Syrup
Directions
Grate carrot and chop cilantro, add to bowl. Heat coriander seeds in a skillet until fragrant. Combine seeds and remaining ingredients in a blender to make dressing. Toss with carrot mixture and serve.
