Black Bean Quesadillas

Ingredients
4 Whole Wheat Tortillas 1 tsp chopped garlic1 cup 2% Mexican cheese blend1 can black beans1 can diced tomatoes with green chilies2 Tbsp ground cumin
Directions
In a large skillet over medium heat, cook black beans, tomatoes, cumin and garlic until liquid dissolves, stirring occasionally. Lightly coat griddle with cooking spray and preheat. Place one tortilla on griddle and fill with half of bean mixture, topped with ½ of the cheese. Place another tortilla on top. Cook for 3 to 5 minutes on medium heat, watching carefully so tortillas do not burn. Flip and cook 1 to 2 minutes more. Repeat w/ remaining ingredients. Cut each tortillas in half to make 4 servings. Service with light sour cream and/or salsa.

    I made these same quesadillas from my own VERY similar recipe and we LOVE them! Great with some homemade guacamole! I use my own whole wheat w/flax tortillas (see my recipe) and they turn out great & very nutritious. Great for those nights where you want a quick, easy & cheap dinner! - 5/7/11
