Rhubarb Muffins

Ingredients
Rhubarb, 1 cup, diced Flour, white, 2 cups Granulated Sugar, 1¼ cup Baking Powder, 2 tsp Salt, .½ tsp Egg, fresh, 1 large Milk, 2%, 1 cup Butter, unsalted, melted 1/3 cup
Directions
Melt butter. Combine with egg and milk. Mix together dry ingredients (reserving 1/4 cup sugar for later) in seperate bowl. Stir dry ingredients into wet ingredients. Fold in rhubarb.

Pour into muffin cups. Sprinkle with reserved sugar. Bake at 350 for 25-30 mins.
