Strawberry~Rhubarb Crumble

Ingredients
5 cups quartered strawberries3 cups sliced rhubarb 1/3 inch thick1/2 cup sugar1/4 cup cornstarch1 teaspoon fresh lemon juicesome lemon zest3/4 cup oats ( ground into flour)3/4 cup oats (old-fashioned)1/2 cup light brown sugarpinch salt4 tablespoons ( cold)Earth Balance buttery spread
Directions
Preheat oven to 375 *. Lightly grease a 7x11 baking dish.
In a medium bowl, combine strawberries,rhubarb,sugar, cornstarch , lemon juice and zest. Toss to coat. Pour into baking dish.
In same bowl add oat flour, oats brown sugar and salt- stir. Mix in cold butter spread with pastry blender(?) til crumbly. Spread over fruit mixture.
Bake for 30-40 minutes until golden brown.

Serve with whipped topping or ice cream for 8

    I've made this pie twice! The first time I use blueberries with the rhubarb and strawberries and the second time I used blackberries. Both versions were wonderful! It is easy and delicious! My family loves it! - 6/6/09

    I used frozen mixed berries w/5 cups of Rhubarb. I also used oat flour & applesauce as a fat substitute. I am making it for tomorrows mothers day brunch. Yummy! - 5/9/09
