Oven Roasted Chicken & Vegetables

Ingredients
1 cup, chopped or diced Broccoli, fresh 1 cup Cauliflower, raw 1 cup, pieces or slices Mushrooms, fresh 1 cup, cubes Yams 0.50 cup, chopped Peppers, sweet, red, fresh 1 tbsp Extra Virgin Olive Oil 5 oz Tomato, grape (3oz = approx 12 tomatoes) 1 cup Zucchini - chopped8 tbsp marinade bay teriyaki sauce 16 oz Chicken Breast Boneless Skinless
Directions
Cut the chicken into about 1" cubes. Marinade for a couple of hours in the teriyaki sauce.
Line a large cookie sheet with foil or parchment, spray with cooking spray. (I use olive oil in a spritzer)
Place vegetables on cookie sheet. Spray with olive oil. Add chicken. Toss chicken and vegetables. Cook in 400 degree oven for 40 minutes, toss chicken and vegetables half way through cooking. While the chicken ad vegetables are cooking, prepare brown rice.
Serve the cooked chicken & vegetables along side or on top of rice.
