Ingredients
1.0 cup, pieces or slices Mushrooms, fresh1.0 cup, chopped Onions, raw3.0 cup, sliced Zucchini1.5 cup Trader Joe's Organic Tricolor Quinoa230.0 gram Tinkyada Brown Rice Pasta Lasagne6.0 cup Spouts Mushroom Pasta SauceSalt and Pepper to taste.3tbl Italian Seasoning
Directions
Chop veggies into pieces. Break noodles into bitesize pieces, Add all ingredients to a large pot and add enough water to cover. Let cook on low heat until noodles are done and quiona has absorbed most of the liquid. Should be a stew like consustancy. About 45mins. Top with nutritional yeast and red pepper flakes. Serving Size: Makes 6 Large Servings
