Turmeric Coconut Rice

1 cup Jasmine Rice - white .5 small Onions, raw 3 clove Garlic 3 tsp Ginger Root 1 tbsp Extra Virgin Olive Oil .5 tsp Salt 1.5 tsp ground tumeric (by INSPIREDBYCHJ) .875 cup Rooster Brand Coconut Milk 1.25 cup (8 fl oz) Water, tap
In Medium Sauce pan over medium heat oil. Add Diced onion, garlic, grated ginger and salt. Stir and cook for 5-7 minutes, or until onions have become golden and soft but haven't yet browned.
Add rice and turmeric to the pan and stir until evenly combined. let the rice cook for a few minutes stirring frequently, then add coconut milk and water. Stir to combine and raise heat to allow liquid to boil.
Once boiling reduce heat to lowest setting and cover. cook for 15-17 minutes or until all liquid has been absorbed. Fluff with a fork and serve with fresh basil if desired
