Cranberry Oat Bran Muffins with Stevia

1 1/4cups oat bran1 cup whole wheat flour2 teaspoons baking powder1/4 teaspoon baking soda4 Tablespoons Stevia Extract (powdered)3/4 cup unsweetened applesauce1/2 cup unsweetened Almond Milk1 large egg1 tablespoon canola oi1/2 cup dried cranberriescinnamon, for sprinkling
Preheat oven to 400 degrees. Makes 12 muffins.
Spray bottom of 2 1/2 inch muffin cups with nonstick spray, set aside (or use paper liner cups).
In mixing bowl combine all dry ingredients, oat bran through Stevia. Make a well in the center of the dry mixture and set aside.
In another bowl combine the wet ingredients, applesauce through canola oil. Add applesauce mixture all at once to dry mixture, stirring until just moistened (batter will be lumpy). Gently fold in cranberires.
Spoon into prepared muffing cups, filling 2/3 full. Lightly sprinkle tops with cinnamon. Bake at 400 degrees for 18 minutes or until a toothpick comes out clean. Remove from cups and cool on a wire rack. Serve warm.
