  • Number of Servings: 4
Ingredients
2 medium avocados1 and 1/2 lb new potatoes (or yukon golds - whatever you have around)1 T Smart Balance Light1/2 cup nonfat milk1 dash lemon juicesalt, pepper, and garlic powder to taste
Directions
Peel and quarter the potatoes, then wash them thoroughly.

Place the potatoes in a large pot with enough cold, salted water to cover them.

Meanwhile, prepare the avocados, making sure to remove any brown flesh. Scoop into a bowl and stir until smooth with lemon juice.

Place the tablespoon of Smart Balance and milk in the microwave until melted and warm.

When potatoes are fork tender, mash them in a large bowl or a stand mixer, slowly adding the milk and butter spread mixture.

When potatoes are mashed to your liking, gently fold in avocado mixture gently, or in a stand mixer - use the lowest setting.

Keep warm and serve!

(hint: Using a small crockpot is a great way to keep potatoes creamy and warm while waiting to serve.)

I use this as a filling for vegetarian enchiladas. Just wrap the avocado-potato filling in whole wheat tortillas, drizzle enchilada sauce on top, and bake for 20-25 mintues. Delicious! - 3/20/07

Pardon me, but... what on earth is "Smart Balance"? - 7/10/12

NORVANNE I was going to ask the same thing. I don’t think we have it in Canada. I noticed someone replied though to your question. I would prefer grass fed butter. The small amount of butter I use is always better than margarine IMO - 10/16/17

I would make it with butter no point in having spreads - 1/5/19

Over Six hundred mg of sodium per serving is tooo much in my book. Especially since it is coming from the margarine. Taste was good, just too much salt. Left it out and individual added own butter/salt. - 8/28/18

The sodium level is three times the healthy limit, but I could skip the salt adding. - 6/12/20
