Low Carb Lemon Chicken

Ingredients
4 boneless, skinless chicken breasts1/3 c. lemon juice1/4 c. olive oil2 Tbsp finely, chopped red bell pepper1 Tbsp Dijon mustard2 large garlic cloves, chopped1/2 tsp. salt1/4 tsp. black pepper (optional) Tools: Meat mallet, large Zip Loc Bags
Directions
If breast are frozen, rinse with cool water to remove glaze. Place in Zip Loc Bag, do not zip closed! With mallet, pound to 1/4 thinkness. Place in another Zip Loc Bag.
Mix lemon juice, cloves, seasoning & mustared in bowl, pour over enclosed breasts- marinate for overnight or minimum 30min.
Pre heat Oven- 350* & cook 25-30 min. Or may grill to golden brown, basting with additional sauce as needed, DO NOT use marinade to baste! May transfer germs!

    This is great! I made it last night. Left the peppers out since they are too expensive in the store right now, but I plan to try it with the peppers too. Great flavor!
