1.0 tbsp Saffron0.5 breast, bone and skin removed Chicken Breast, no skin, fried1.0 cup, chopped Peppers, sweet, red, fresh8.0 oz Shrimp, cooked8.0 oz, boneless Squid, raw16.0 tbsp Extra Virgin Olive Oil2.0 cup White Rice, long grain, cookedSalt 2 tsp.
Saute peppers in oil add salt. Meanwhile boil shrimp in water, (save water). Add squid to peppers, stir fry. Add 1 TB saffron or use yellow rice. Add shrimp and water to pan. Add rice 2 cups. Cover and simmer until done. You can also add clams to shrimp. Enjoy with salad.
