Excellente enchilada casserole

Ingredients
4 Mission soft taco size low carb tortillas4 oz. reduced fat mexican cheese1 can whole kernel cornenchilada sauce (I prefer medium Old El Paso)1 pound extra lean ground beef1 small onion, choppedCook the beef and saute the onions. Pour a little enchilada sauce in bottom of square baking dish to keep the tortillas from sticking. Cut tortillas into strips about 1-1/2" wide. Layer some of the tortilla strips on bottom of baking dish to cover. Mix all the other ingredients together except for the cheese and pour 1/2 of it on top of tortilla strips. Repeat the layers one more time. Cover with last of the tortilla strips. Pour a little bit more enchilada sauce over the top and cover with cheese. Bake at 375 for 15-20 minutes until cheese is melted. Enjoy!
