JC Cauliflower Fried Rice

Ingredients
1 head, medium (5-6" dia) Cauliflower, raw 1 serving 1 med yellow onion (by TODD7623) 0.5 cup Peas, frozen .5 cup, chopped Carrots, raw 2 large Egg, fresh, whole, raw 1 tbsp Sesame Oil 3 tbsp Kikkoman Less Sodium Soy Sauce .25 tsp Ginger, ground .25 tsp Pepper, red or cayenne 1 serving Green Onion (fresh-1 stalk)
Directions
Pulse cauliflower in food processor until it resembles rice. Heat a large skillet over medium heat and drizzle in sesame oil. Add onion, peas, and carrots and saute until tender, about 2 min. Meanwhile in a small bowl, whisk together soy sauce, brown sugar, ginger and red pepper flakes; set aside. slide veggies to one side and add in the beaten eggs, scrambling until cooked through then incorporate with the veggies. Stir in cauliflower and pour the soy sauce over the top mixing well. Cook for an additional 3 to 4 minutes until cauliflower is soft and tender. Top with green onions.
