Apple carrot coconut flour muffins

Ingredients
8.0 large Egg, fresh, whole, raw3.0 tbsp Cinnamon, ground2.0 tsp Vanilla Extract1.15 cup Applesauce, unsweetened1.25 cup, grated Carrots, raw2.0 tsp Baking Sodok6.0 tbsp Extra Virgin Olive Oil4.0 oz Almond Breeze Almond Milk, Unsweetened Vanilla1/4 cup Stevia baking or equivalent liquid 4 tbsp Date paste1 cup coconut flour
Directions
Mix all wet ingredients plus stevia together. In separate bowl sift all dry ingredients. Wisk dry into wet ingredients and mix well. Let sit 5 minutes. Should be like a thick batter, but still scoopable. Thin with a small amount of almond milk if needed. Scoop evenly into 24 greased muffin cups. Bake at 400 for 18 to 25 minutes, until starting to brown and the middle vomes out springy to touch and fork clean. Serving Size: Makes 24 muffins
