Mediterranean Quinoa Salad

2 cup Nature's Earthly Choice Quinoa - 1/4 cup dry 1/2 cup cooked 0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 serving Lemon, fresh squeezed, juice of one whole lemon 1 tbsp Extra Virgin Olive Oil 2 cup Cucumber Seedless Long English (by HOSTALADY) 1 cup Tomatoes - sm cherry tomatoes 1 serving Cheese - Feta, Crumbled - Treasure Cave x 1/4 Cup 1 dash Pepper, black 3 serving Mezzetta Pitted Greek Kalamata Olives (4 olives in a serving)
Cook the quinoa according to package directions.
Dice veggies. Add red onion, olives, cucumber and tomatoes to cooled quinoa. Squeeze about half a lemon over it. Drizzle olive oil over quinoa then add feta, and pepper to taste. Add salt and more lemon juice if desired
