0.25 cup, crumbled Feta Cheese28.0 Grams Basil2.0 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh5.0 Italian tomato Red Ripe Tomatoes2.0 serving Olive Oil: Kroger, Pure Olive Oil, 1tbsp/serving1.25 cup Cheese, Kroger Part Skim Mozzarella Cheese Shredded2.0 serving Mediterranean seasoning
Preheat oven to 425 degrees.
Wash eggplant and slice vertically towards stem. Wash and slice tomatoes. Fan out egg plant and sprinkle with seasoning. Place on large baking sheet and stuff tomato slices, mozzarella, and basil leaves between eggplant slices. Drizzle with olive oil, and sprinkle with feta and seasoning. Bake at 425 degrees for 30 minutes.
