Rancheros Omelette

Ingredients
1.0 large Egg, fresh, whole, raw3.0 tbsp Salsa0.25 cup, chopped Onions, raw0.25 cup Beans, black0.25 cup Aldi Fit and Active Egg Substitute1.0 serving Guacamole - Wholly Guacamole 100-cal Snack Packs0.25 cup Cheese - Mexican Blend - 2% - 4 Cheese - Shredded - Kroger
Directions
1. Spray nonstick pan with olive oil spray and saute onions until translucent on medium heat. Add black beans and spices to warm. Set aside. 2. Whisk egg with egg substitute and pour into heated nonstick pan. Place cheese in the center of the omelette along with spiced bean, onion mix and salsa. Cover pan with lid and let cook for 2 minutes. 3. Lift lid and fold omelette in thirds and plate. Top with guacamole. Serving Size: One omelette
