Ingredients
0.50 lime yields Lime Juice 1.50 cup, sliced Mangos 2 cup Spinach, fresh 1 cup, chopped Peppers, sweet, red, fresh 1.75 cup Beans, black 3 tbsp Extra Light Olive Oil 0.33 cup Green Giant White Shoepeg Corn 4 tbsp (C) Vinegar, Red Wine (Gr Value) 2 serving Grape Tomatoes (3oz/12 tomatoes) 0.50 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 cup Trader Joe's Organic Tricolor Quinoa 4 serving Green Onion (fresh-1 stalk) 4 serving Cilantro, fresh chopped 1/4cup (by MINDYYY)
Directions
Cook quinoa for about 20 minutes until fluffy, mix with chopped vegetables, whisk olive oil, lime, salt, pepper and vinegar, pour over salad and chill.
