Lime Ricotta Protein Pancakes

0.08 cup Ricotta Cheese, whole milk 1 large Egg, fresh, whole, raw 1 tsp Salt 3.50 tsp Baking Powder 2 tsp Splenda 0.75 cup Flour - Gold medal all purpose flour 2 serving Optimum Nutrition 100% Whey Protein - Vanilla Ice Cream 3 serving Egg white, large 0.5 cup Simple Truth Unsweetened Almond Milk (1 cup = 8 oz) 0.25 cup Greek Yogurt, Plain Kirkland Brand 1 tbsp Lime Juice, juice of 1 lime
Combine dry ingredients in a bowl
Mix egg yolk and milk in another bowl
Whip the 4 egg whites in a mixer or by hand until stiff
Pour the milk, yogurt and egg yolk into the dry ingredients and mix
Fold in the egg whites
Cook on stovetop in nonstick skillet sprayed with coconut oil spray (or similar) until browned on both sides
Serving Size: Makes 12 one third cup servings
