Quinoa Salad

Ingredients
1/2 cup wheatberries1/4 cup quinoa1/2 cup brown rice1/2 cup red rice1 cup canned artichoke hearts1 cup tomatoes, diced1 cup mixed mushrooms, sliced1 tablespoon olive oil
Directions
1/2 cup = serving size
Makes 4 - 6 servings
Combine all ingredients except mushrooms in a sauce pan. Cover with water until it reaches your first knuckle on your pointer finger. Bring to a boil. Reduce heat and cover. Simmer for 20 minutes or until wheatberries are tender.
While your grain mixture is cooking, saute mushrooms in a small amount of olive oil, about 1 tablespoon, until golden brown. Add to grains and finish cooking.
