5 medium tomatoesSTUFFING:1 cup garlic/cheese croutons, crushed2 tablespoons grated Parmesan cheese2 tablespoons grated American or cheddar cheese4 tablespoons melted butter1/2 teaspoon salt1/4 teaspoon freshly ground pepperChopped fresh parsley for garnish
Directions
Cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. shell. Invert onto paper towels to drain. Mix stuffing ingredients. Spoon into tomatoes; sprinkle with parsley.
Place tomatoes in a baking dish; cover tomatoes with aluminum foil to prevent over-browning of stuffing. Bake at 350° for 30 minutes or cook on grill until done.
