Italian Salmon

Ingredients
Coho Salmon, 24 oz Olive Oil, 2 tbspGarlic, 3 tspTomatoes, red, ripe, 2 cupOnions, raw, .5 cup, choppedBasil, 2 tbsp
Directions
Brush one side of aluminum foil with oil.

Place 4 Salmon steaks or fillets filets on the foil.

Mix the olive oil, fresh basil, ,tomatoes, and onions. Add salt and pepper. Divide the mixture into fourths and spread each portion on top of each fillet or steak. Seal the foil around the fish and cook on the grill for 10-15 minutes. No need to turn.

    I oven-baked mine for about 25 mins at 325 and it turned out great. I left the olive oil out too - the tomatoes were moist enough and with fresh salmon it didn't need the moisture or fat. - 6/4/10
