Garlic Scallops & Tomatoes

1 lb bay scallops (80/120)10 cloves of garlic - crushed1/2 cup of chicken broth, separated3 TBLSP extra light virgin olive oil14 grape tomatoes - halved
In a large frying pan - put 1/4 cup of the chicken broth and the olive oil in the pan and heat up. Add the garlic and saute until golden, adding the chicken broth as the sauce evaporates. Add the scallops and saute together until the scallops are opaque. Remove pan from heat and add the tomatoes and toss lightly. Makes 3 - 4oz. servings.
I serve this with angel hair pasta which, if you add the pasta to the boiling water at the same time you add the scallops - it's all timed just about right.
