Ingredients
1 pat (1" sq, 1/3" high) Butter, unsalted 4 large Egg, fresh, whole, raw 2 stalk, large (11"-12" long) Celery, raw .25 cup, chopped Onions, raw 5 serving Cherry Tomatoes, Fresh, 1 Tomato 1 oz Blue Cheese 1 cup Spinach, fresh
Directions
Dice onion, celery, tomatoes in butter. Add spinach, cook down then add egg, season to taste, cook until set.Add cheese.When melted flip and turn off heat. Serve
