Coconut Flounder

Ingredients
2 Tbs sweetened coconut1/4 cup progresso bread crumbs1 Large Egg White1 Tbs WaterButtery Cooking Spray4 flounder filletsSalt to taste
Directions
Mix egg white, salt and water. Dip each piece of flounder in egg white. Mix bread crumbs and coconut together. Coat each piece of fish with bread crumb mixture. Spray pan with cooking spray and lay each piece on the pan in a single layer. Bake at 400 degrees for about 15 minutes or until coconut is light brown.
