Black Bean Guacamole Dip

Ingredients
1 14.5 ounce can corn, drained and rinsed1 14.5 ounce can black beans, drained and rinsed2 medium avocados, chopped 1 medium yellow or white onion, chopped1 lime, juiced
Directions
Mix ingredients together, pour juice over mixture and mix well with fork. Add a little salt if you wish.

Makes 8 3/4 cup servings.

    I make a version of this pretty often. Try adding some honey. It really brings out the flavors! I also dice a tomato or two into it -- whatever is in season. - 5/17/11

    We pureed the avocado, black beans, and lime juice in the food processor, then shredded the red onion. We added just one can of corn whole, after draining, but it still felt like it was missing something. Added some cayenne pepper and cumin--yummy, but we will tweak some more to fit our own tastes. - 3/14/11
