Fresh Pesto

Ingredients
1/2 cup shredded Parmesan cheese2 cups fresh basil (leaves and tender stems only)1 cup fresh flat leaf parsley (leaves only)1/2 cup unsalted, dry-roasted peanuts2 tsp minced garlic1 tsp fresh lemon juice1 tsp kosher salt 1/4 tsp freshly-cracked, black pepper1/2 cup extra virgin olive oil
Directions
Pluck herb leaves then rinse and dry. Use your salad spinner if you have one. Otherwise, you can dry with a clean kitchen towel or paper towel.

Using the shred attachment to your food processor, shred approximately 1/2 cup Parmesan cheese. Switch to your blending blade and then add the herbs, peanuts, minced garlic, salt and pepper. Blend on the lowest setting while streaming in the olive oil. Turn up the speed and process until combined and very smooth.
