Spinach and Toasted Walnut Pesto

Ingredients
6 cups fresh spinach.5 cup EV olive oil.5 cup grated parmesan cheese2 cloves garlic, crushed.5 cup walnutssalt, pepper, and a dash of nutmeg
Directions
Toast walnuts in toaster oven. In the mean time, heat oil and garlic in a small pan for about 5 minutes. Pack spinach into a food processor or blender. Add walnuts, seasoning, and warm oil/garlic. Pulse until a paste forms. Pour into bowl and stir in cheese. Add additional seasoning to taste. Toss with warm pasta. One serving is about 1 Tablespoon. This recipe will make about 12 servings. The rest can be frozen or refrigerated. Great with shrimp and Fettuccine.
