Low Fat Cheese Strata (Breakfast Casserole)

Ingredients
12 slices white bread1 lb grated low fat cheddar cheese10 oz pkg frozen broccoli2 c diced ham1 1/2 c. fat free egg beaters3 1/2 c. milk1/3 c. chopped onion1/2 c. green pepper, chopped1/2 tsp salt1/4 tsp ground mustard
Directions
Cut 12 circles from bread slices; set aside. Place remaining scraps of bread in bottom of 9x13 pan. Layer over bread: cheese, reserving some for top, then broccoli, then ham. Arrange bread circles on top. Combine remaining ingredients and pour over all. Cover and refrigerate overnight. Bake uncovered at 325 degrees for 55 minutes. Sprinkle some cheddar cheese over top for last 5 minutes. Let stand 10 minutes before serving.

    This was good--my family enjoyed it. Took much longer to cook than called for and bread stayed pretty soggy. Will probably cut back to 3 cups milk next time, 1/4 teaspoon thyme and 1/2 teaspoon pepper added nice flavor. - 12/25/09
