Mock French Toast - South Beach Friendly (Phase One)

Ingredients
- 1 Cup of Part Skim Ricotta Cheese- 1 Large Egg- 2 tsp Vanilla Extract- Cinnamon to taste (about 1 tsp)- 2 Splenda packets
Directions
- Bring egg to room temperature or place in warm water for about 5 minutes.
- Place all ingredients in blender and blend thoroughly
- Ladle or pour into small pan (coated with cooking spray) on med to high
- You can either go for thin crepes or do as I do:
scramble loosely, then form into a pancake shape
- Once in desired shape you can press down to cook out some of the moisture and brown slightly.
- Serve with no sugar added Pancake Syrup and added cinnamon if desired

Notes:
- You can go as far an the pre-browning stage in pre-prep and just brown to finish.
- I made 3 large pancakes, but imagine you can get 4 or so medium sized ones.

    As far as TASTE goes, it was GREAT! You must brown it. That's the key to the flavor. It sorta comes out like a scrambled mess, but it tastes great. Smells SO good cooking. PS- since it was going in the food processor, I used LF cottage cheese, not ricotta. It came out very smooth. - 7/3/12

    Love crepes. Loved vanilla flavor. Added fresh nutmeg. Mmm...let 1st pancake brown. Wouldn't flip. 2nd one - I let it brown and tried to flip onto 2nd pan. Wouldn't come out as pancake. Messy. Not like crepes at all. Texture like ricotta. Worth it to me to add bit of flour and nonfat milk. - 2/18/14

    This is really tasty and my husband liked the amount of cinnamon. I might try adding about a Tablespoon or two of soy flour when we move to phase 2 ...just to make it "firm up" a bit better in the skillet. I will make this again though. Thanks!! - 10/25/08
