Collagen Shortcake Bars (No Bake)

Ingredients
OILS to melt-2 tbsp Butter, unsalted 1/4 c Coconut Oil1/4 c Coconut Mana (Nutiva from Amazon)DRY stuff to mix -1 tsp Cinnamon, ground 1/4 tsp h Salt 1 tsp Vanilla powder (extract works fine too)1/2 tsp Cream Of Tartar 1/4 cup Nutiva Coconut Manna 1/4 cup Great Lakes Gelatin 1/4 cup TigerNut Flour (Almond works fine too) SWEETENER -1/4 c Lokanto or Xylitol or Allulose. Or use Stevia or sucra drops. Whatever works for you.
Directions
Mix dry ingredients together with a fork while melting the oils & mana (preferably in a pan of water & not micro) Next add oils then stir until blended. This will be a dry crumbly dough. Taste. Adjust sweetness to your taste with your sweetener of choice. Press into parchment paper lined pan. I use a 6x10 pan and get 16 1x2 inch 'cookies' - use what you have. Experiment with thickness. Refrigerate for 1+ hr then cut. Store in fridge.
