Italian Sausage Soup with Tortellini

1 lb Italian sausage, casings removed and sliced or bulk1 c. chopped onion2 cloves garlic, minced1 14.5 oz can beef broth1 28 oz can petite cut diced tomatoes1 c. sliced carrots1 1/2 c. sliced summer squash1 green pepper, chopped1 tsp. basil1 tsp. oregano3 Tbsp chopped parsley7 oz. box of cheese tortellini1/2 c. grated Parmesan cheese
1. Cook sausage until done. Add onion, garlic, and broth in a large stockpot and mix well.
2. Add the tomatoes, carrots, squash, green pepper, basil, oregano and parsley. Add water until barely covered. Simmer for several hours or until flavors are blended.
3. Add tortellini during the last 30 minutes and cook until tender.
4. Top each serving with Parmesan cheese.
