Ingredients
1.0 cup Spaghetti Squash1.0 cup, cubes Eggplant, fresh0.5 cup, strips or slices Carrots, raw0.75 cup, pieces or slices Mushrooms, fresh1.0 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)4.0 clove Garlic6.0 oz Ground beef, lean74.0 gram(s) bell pepper, red, sweet, raw2.0 1tsp Olive Oil3.0 tbsp Parmesan Cheese, grated
Directions
Cook and separate squash. Roast vegetables. Brown and drain ground beef. Mix all ingredients. Add Italian seasoning and cheese. Enjoy!
