Cauliflower Chicken or Shrimp Fried Rice

2.0 large Egg, fresh, whole, raw0.5 tsp Onion powder1.0 tbsp Sesame Oil6.0 ounces Chicken Breast (cooked), no skin, roasted340.0 Grams Cauliflower, raw0.25 cup, chopped Onions, raw4.0 tbsp Soy Sauce1.0 tbsp Extra Virgin Olive Oil
Cook eggs separately, cook chicken separately (I poached it). Heat the two oils in a sauce pan, add onion for a few minutes, then add cauliflower rice. Add 2 tbsp soy sauce. Heat a couple minutes. Add cut up chicken and cooked egg (cut into small pieces). Add other seasonings. Add additional 2 tbsp soy sauce. Cook a couple more minutes and serve.
Serving Size: makes 4 servings - 4 oz cauliflower rice per serving
