Basic Pizza Dough Recipe

Ingredients
2 ¼ cup all purpose flour (More, if required)1 Tbs. Active dry yeast1 Tsp. salt1 cup very warm water1 Tsp. sugar1 Tbs. Olive oil, divided
Directions
1.In a large bowl, combine 2 ¼ cup flour, yeast and salt. Stir until ingredients are well mixed.

2.In a small bowl, combine water, sugar and 2 teaspoons of the olive oil.

3.Slowly add water mixture to flour mixture. More flour may be added (1-tablespoon at a time) if, after mixing, the dough is still too soft.

4.Knead dough well with hands for 20-25 seconds.

5. Place the dough in a small bowl that has been coated with a non-stick spray; turn the dough to lightly coat with 'oil'. Cover with plastic wrap or a small plate and allow dough to rise at room temperature for 35 to 40 minutes; dough should double in size.

6.Punch the dough down and let sit for 10 minutes.

7.With lightly floured hands, spread dough over a 12-14 inch pizza pan that has been sprayed with non-stick oil. Push the dough up to the edge of the pan forming a rim, if desired.

8.With a fork, prick the dough 10-15 times.

9.Brush with the remaining 1-teaspoon oil.


Dough Variations:
-Add two-tsp. caraway seeds to dough while kneading.
-Add ¾ cup shredded mozzarella to dough while kneading.
-Replace 1-cup of the flour, with 1-cup cornmeal.
-Replace any or all of the white flour with whole wheat flour.
-Add 2 tsp. cracked black pepper to flour and salt mixture.
-Add 2 Tbs. Minced garlic to the flour and salt mixture.
-Add 1 tsp. basil and 1 tsp. oregano to flour and salt mixture.
-Add 2 tsp. Mrs. Dash (any flavour) to flour and salt mixture.
-I like to add thyme and rosemary to the dough while kneading


Baking Suggestions

-Pre-cooking the shell for 5 minutes on each side will result in a crispier, more solid crust.

-Top shell as desired. Bake at 450 degrees for 14-16 minutes; watch carefully.

This recipe makes enough dough for 2-large pizzas.

I'll often divide the dough in four and freeze smaller balls for use as calzones later!
