Veggie Omelet

Ingredients
2 large eggs1 cup fresh spinach1/4 cup chopped onion1 clove garlic chopped1/2 cup mushrooms1 slice provolonePAM cooking spraySalt and pepper
Directions
Spray small skillet with PAM and add spinach, onion, garlic, and mushrooms.
Let cook 1-2 minutes depending on stove.
Put off to side.
Crack eggs and dump into large skillet, add salt and pepper.
Let cook for a minute before adding cheese (cut up) over one side of the egg.
When egg is almost done, place veggies on top of the cheese side.
Fold other side on top and let cook on each side.
Makes 1 omelet
