Creamy broccoli and cauliflower soup

20.0 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable3.0 bunch Broccoli, fresh4.0 cup Cauliflower, raw1.0 tbsp Extra Virgin Olive Oil4.0 tbsp chopped Shallots0.5 cup Parmesan Cheese, grated
Directions
Saute shallots and garlic in oil for 4_6 min after boiling broccoli and cauliflower 8_10 min or until fork tender. Using either a high powered blender or an immersion blender blend together the cooked cauliflower broccoli and shallot mixture milk and cheese. Blend on high until smooth season with salt and black pepper
