Black Bean Chili

Ingredients
15 oz can black beans1/2 onion, chopped1 c mushrooms, diced fine1 jalapeno pepper (fresh), diced1 c ripe fresh tomatoes, diced2 cloves garlic, diced8 oz amber or dark beer2 tsp paprika1 tsp dried, ground ancho pepper1 tsp salt1 tsp cumin1 tsp dried oregano
Directions
1. Spray heavy pot with oil
2. sweat onions and mushrooms until soft (cook on low heat for 5-10 min)
3. add garlic, tomatoes, and jalapeno, cook until soft and tomatoes have released their liquid
4. Add spices and beer
5. Bring to boil
6. Reduce to simmer and cook until chili has reduced to a thick consistancy, 20-30 minutes
7. Enjoy with cornbread or crackers!
