Ovenbaked Potato Chips

Ingredients
2 tablespoons olive oil1 teaspoon coarse salt1/4 teaspoon sugar1/8 teaspoon cayenne pepperJuice of 1/2 lime3 large purple potatoes, very thinly sliced
Directions
Preheat oven to 400 degrees F. Mix oil, salt, sugar, cayenne pepper and lime juice in large bowl. Add to potatoes and toss to coat. Arrange potatoes in single layer on baking sheets. Bake until potatoes begin to brown on bottom, about 15 minutes. Turn potatoes over and bake until crisp and brown, about 20 minutes. Sprinkle with additional salt if necessary.

    This is really good!!! We'll have to use a mandolin slicer next time to ensure the chips are all the same size. - 7/4/08

    I cooked them for 15 min. & some came out too done & some wen't done but some were done The one pan worked really well but the cookie sheet didn't cook them unless they we're really thin but the other people like them really well. I like the ones that we're really lighty brown - 1/11/13

    very hard to make (slice the potatoes too thin they burn, slice them too thick they take forever to cook) but once i got a batch to turn out, they were fantastic. - 3/25/09
