Mediterranean White Bean & Cucumber Salad

Ingredients
1 15-oz can low-sodium Northern White Beans (or garbanzo beans), rinsed & drained1 15-oz can low-sodium diced tomatoes, rinsed & drained2 medium cucumbers1/4 c. crumbled low-fat feta cheeseDressing:2 T. red wine vinegar2 T. water1 T. lemon juice1 T. tahini (sesame seed butter)1/4 t. salt1/2 t. oregano1/2 t. basil
Directions
1. Half cubumbers lengthwise, & slice into quarter-inch pieces. Put in salad bowl with beans & tomatoes.

2. Chill for 1 hour before serving.

3. Whisk together salad dressing ingredients ingredients & pour over salad. Mix in crumbled feta cheese and toss to combine..
