3 large eggs, yolks and whites separated 1.5 cup Shredded cheese (I used great value fiesta blend in calculations)1 tsp Baking Powder 1 tbsp Hellman's Mayo
Preheat oven to 400
Using electric mixer whip egg whites to medium peaks
Mix mayo with egg yolks and beat until light and foamy
Mix in cheese and baking powder to yolk mixture.
Fold in egg whites.
On parchment lined baking sheet divide into 6 circles.
Bake at 400 for 12-16 minutes.
Serving Size: Makes 6 pieces
