Brandy's Chicken stuffed with Spinach and Pepper Jack Cheese

Ingredients
2 tsp Garlic powder 0.25 tsp Pepper, black 1 cup, pieces or slices Mushrooms, fresh 1 serving 2 tsp Italian Seasoning 8 tbsp Green Mountain Farms: Greek Cream Cheese & Greek Yogurt 4 serving Great Value Pepper Jack Deli Style Cheese 1 slice 19g 56 oz Sanderson farms chicken breast 15 tsp Great value grated Parmesan cheese 4 cup Marketside Baby Spinach
Directions
Preheat oven to 400 .
Steam Spinach until wilted. Mix spinach with cream cheese and divide into four individual servings.
Split each chicken breast to make a pocket for the stuffing and place in a pan covered with foil and coated with cooking spray
Place a slice of pepper jack cheese in each chicken breast.
Scoop the spinach mixture into each piece of chicken.
Add mushrooms if desired.
In a separate dish, mix Parmesan cheese, Italian seasoning, garlic powder, and pepper.
Spray both side of chicken with cooking spray and coat with Parmesan cheese mixture and return to pan.
Bake for 40 minutes or until chicken is fully cooked. Turn midway through cooking.
