1 cup Chickpeas (garbanzo beans) 1 cucumber (8-1/4") Cucumber (with peel) 1 large (2-1/4 per lb, approx 3- Peppers, sweet, red, fresh .5 fruit without skin and seeds Avocados, California (Haas) 2 cup, chopped Kale 1 cup Spinach, fresh 1 tbsp Extra Virgin Olive Oil 1 tbsp Balsamic Vinegar .25 tsp Salt (table) (by CYNDYY1) 1 dash Pepper, black
1. Chop cucumber, red pepper, spinach, arugula, parsley, and chop the avocado.
2. In a large salad bowl combine chickpeas, everything you just chopped, add vinegar and olive oil. Have a taste and if needed - add salt & pepper.
3. Serve!
