Moroccan Chickpea Brown Rice Salad

Ingredients
Salad:1 1/2 cups cooked brown rice1 cup matchstick carrots4 large green onions, sliced--white and green parts1 (15 oz.) can low-sodium chickpeas, rinsed and drained1/3 cup dates, chopped1/3 cup golden raisins, chopped1/3 cup dried Mediterranean apricots, chopped1/4 cup walnut pieces a small bunch of cilantro leaves, minded with scissorsDressing:1/2 tsp cumin, ground 1/3 cup olive oil 2 tbsp lemon juice, fresh 1 tbsp pure maple syrup (or agave syrup)1/2 tsp Morton Lite Salt 50% Less Sodium Than Table Salt 1/8 tsp chili powder
Directions
All ingredients should be brought to room temperature if they are not. All ingredients should be pre-measured and ready to mix.

1. Mix salad ingredients together in a medium bowl.
2. Whisk dressing ingredients in a small bowl.
3. Pour dressing over salad ingredients; toss. Let rest 10 minutes and serve.
