Banana Flax Spelt Muffins

Banana Date Flaxseed MuffinsINGREDIENTS3 bananas, mashed1/2 cup apple sauce1/2 cup splenda2 eggs1 1/2 cups Spelt flour1/2 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt3/4 cup ground flax seed1/2 cup chopped pitted dates1 tsp Vanilla1 tsp Cinnamon
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a muffin tin
In a large mixing bowl, beat together banana, applesauce, sugar and eggs. In a separate bowl, mix together flour, baking powder, baking soda, salt, ground flax seed. Gradually stir flour mixture into banana mixture. Fold in dates. Spoon batter into prepared muffin tin.
Bake in preheated oven for 30 minutes, or until a toothpick inserted into the loaf comes out clean.
OPTIONAL: mix 1/4 cup of oats, 1/4 cup of splenda brown sugar and 1/4 cup of margarine to a paste. sprinkle on top of the muffins before baking.
