8 ounces fresh chiles (your favourites - I used habanero and jalapeno)½ teaspoon caraway seeds1 teaspoon ground coriander1 teaspoon cumin1/2 tsp fenugreek seeds4 garlic cloves, peeled1 teaspoon kosher salt, or to taste1 tbsp fresh lemon juice1 tbsp tomato paste2 tbsp water
Combine the chiles, spices, garlic, salt, lemon juice, tomato paste and water in the bowl of a food processor.
Process to form a smooth and thick paste. Scrape down the sides of the bowl occasionally.
The flavor of the harissa will deepen over the next day or two, but you can taste it now and add more salt or other optional ingredients to your liking.
Serving Size: Makes 1 cup
