Zucchini Grilled Cheese Sandwich

Ingredients
4 cup Zucchini (Grated) (by STEFANIE822) 2 large Egg, fresh, whole, raw 1 cup Parmesan Cheese, grated 0.25 cup Chopped Green Onions (by DORNETTEB) 8 tbsp Argo Cornstarch 1 tbsp Extra Virgin Olive Oil 8 serving cheese, American, Borden™ Grilled Cheese Melts, 1 slice
Directions
Squeeze excess moisture out of zucchini with a clean kitchen towel. In medium bowl, combine zucchini, eggs, Parmesan, onions, and cornstarch. Season with salt and pepper to taste, if desired. In large skillet, heat olive oil in bottom of pan. Scoop about 1/4 cup of zucchini mixture onto pan and shape into a square. Repeat to make another patty. Cook until lightly golden on both sides, about 4 minutes per side. Top one square with sliced cheese and top with other square. Cook until cheese has melted, about 2 minutes per side. Repeat to make a total of 8 sandwiches. Serve immediately.
