Leek, Potato, & Chorizo Soup

8 oz Chorizo, pork and beef 3 leek Leeks, (bulb and lower leaf-portion), cooked, boiled, drained, with salt 3 serving Red Potato 1 cup, chopped Carrots, raw 8 cup Chicken stock, home-prepared
Add chorizo to a big soup pot and cook using spatula to chop sausage in small pieces
chop carrots finely and add to pot, stir
chop leek in 1/2 length-wise and then in slices
Add leeks slices to a large bowl filled with water and a colander added. Smoosh leeks around to separate. wait a minute for the dirt and silt to settle to the bottom of the bowl. lift colander out of the water, let drain, and add all the leeks to the pot.
stir
add two 32oz containers of chicken stock or broth.
heat through (20 minutes)
turn off heat and serve
put extra in an air-tight container and in the fridge.
Serving Size: 1 cup stuff & 1 cup broth
