Prune Cake

1.5 cup, pitted Prunes, dried 1.5 cup dry Oatmeal (plain) 1 cup Silk Soy Milk, original 1 tbsp Cider Vinegar 4 large Egg, fresh, whole, raw .16 cup Coconut Oil 2 tbsp Honey 1 tsp Cinnamon, ground 1 tsp Ginger, ground
1. Mix the milk with the vinegar and set aside
2. In a small sauce pan cover the prense with water and bring to boil until they are very soft (about 10 min). (you can use the "left over water" as a tea its super delicious)
3. In a separate bowl mix all the dry ingredients.
4. Mix all the wet ingredients separately.
5. Mix wet and dry and add the milk. Add the prunes to the mix (drain and mashed)
6. Put into a medium pan for about 40 min at 375F.
Serving Size: Makes 10 - 12 portions
