Califlower mash

Ingredients
3.0 cup Califlower (RAW)6.0 tbsp Sour Cream0.25 cup Aldi's Happy Farms Shredded Mild Cheddar Cheese (1/4 C)4.0 tbsp Butter, salted
Directions
Cook the califlower in a pan on medium heat for 6-8 minutes. Turn off the heat and wait a couple minutes to cool down. (Optional: you can drain any excess water using a cheese cloth towel. I didn't have one on hand so I skipped this step). I placed the cooked califlower in a food processor for a minute. I added the rest of the ingredients and salt and pepper to taste.
